I'd ask if you've shot the gun with good heavy ammo for distance/accuracy yet. That in itself is a more desirable thing to go for than the red herring velocity variances put out. I know it can be bothersome, but if it shoots quite well while gaming it, I wouldn't worry too much about the variation. I've seen 20-30fps variation in my M24 from one night to another in the past (three nights of testing Bastards, one night 500-520fps, next night, 490-510fps, next 480-495fps............ after that back up to 500-510), couldn't figure it out, so I just ignored it. But the configuration I have now I'll likely to stick with, seems 400fps w/ 0.20g, full hop up and 0.36g washed Bastards are the magic combo for me now for great range and accuracy.
And, it could be your spring since you said you cut two coils off it. Doubt it, but is possible since you introduced an inconsistancy into the set up. Could be lube on the hop up as well, could be a few things actually, but luckily a bolt action spring rifle is very simple to troubleshoot.
