Cup the bolt handle with your over hand, so the knob is close to the base of your pinky, so your index finger base rests on the bent part and your thumb on the rear of the cylinder.......... try that, is the best and only way to cock a bolt action rifle with anything stronger than stock. I think the problem lies with your trying to use the end of the bolt handle (as said, the problem lies six inches behind the bolt handle) and expecting to cock it like a real steel bolt action. Doing it the way I suggested above will likely remove a lot of the canting you described which is causing you problems.
